This week we head out with Randy Cates of Cates International Inc. to harvest moi raised in submerged cages off the Hawaiian shores. This show aired originally on Sept. 4, 2004.


MOI POKE

* moi (diced)
* Hawaiian salt
* kukui nut (minced) or inamona
* limu kohu (chopped)
* shoyu
* sesame seed oil
* sweet onions (chopped)
* green onions (chopped)
* Hawaiian red chili pepper (minced)

Combine ingredients to taste.
