Mixing It Up With Moi Poke

This week we take the show on the road and head out with Randy Cates of Cates International Inc. to harvest moi raised in submerged cages off the Hawaiian shores. Then we go back to the kitchen to use our “catch” for some fresh moi poke.

This show aired originally in September 2004.

MOI POKE

* moi, diced

* Hawaiian salt


* kukui nut (minced) or inamona

* limu kohu, chopped

* shoyu * sesame seed oil

* sweet onions, chopped

* green onions, chopped

* Hawaiian red chili pepper, minced

Combine all ingredients to taste.
