Thanksgiving Dinner At Shriners

We’re taking the show on the road this week to celebrate Thanksgiving at Shriners Hospital.

GUAVA GLAZED ROASTED HAM

* 1 ham, scored
* 2 tablespoons butter, melted

For Glaze:

* 2 cups guava concentrate
* 1 cup brown sugar
* 1/2 cup butter
* salt and pepper, to taste

Bush butter on ham and roast in an oven at 325 degrees for 45 minutes.

Brush with guava glaze and cook for another 15 minutes. Remove from the oven and brush with more of the glaze. Slice ham before serving.

ROASTED PUMPKIN MASH

* 2 small pumpkins, about 21/2 to 3 pounds
* 3/4 cup butter
* 3/4 cup honey
* 2 cups milk
* salt and pepper, to taste
* 1 teaspoon ground cinnamon

Cut pumpkins in halves and remove seeds. Season with salt and pepper before roasting for an hour at 350 degrees.

While pumpkin is roasting, heat milk and bring to a simmer. Scoop out the pumpkin and put in a medium stainless bowl. Mash it with a wire whisk until smooth. Add remaining ingredients and mix well. Adjust seasoning to taste.

In a medium sauté pan, melt butter on low heat before adding vegetables. Cover pan and let cook for about 20 minutes. Sprinkle parsley and season with salt and pepper, to taste.
