The Sixth Annual Starlight Ball
“When Cool was King”

Created by the Honolulu Academy of Arts’ ARTafterDARK, the sixth annual Starlight Ball happens Jan. 10. This year’s theme, “When Cool Was King,” gathers inspiration from the 1950s - think Rat Pack, skinny Elvis and Ann-Margret. Sponsored by Prada, partiers will enjoy themselves in various areas of the academy that have been transformed into The Boardroom, the Lush Lounge and the Hep Cat Lounge with live entertainment, cocktails and a Vegas-style buffet. I know how it sounds. But I was doing some recipe research on perfect roasted potatoes for Christmas dinner, and I kept coming up with potatoes cooked in duck fat. The Brits are behind the movement, of course, and they do know potatoes, so I decided to follow their lead. I wasn’t sure if I could find it readily available; at one point, my brother suggested buying our own duck and rendering the fat ourselves (this sounded tricky and slightly gross to me). So I made a phone call to R. Field and found out it had duck fat for sale. I used Nigella Lawson’s recipe for “perfect roast potatoes,” and I was not disappointed. The flavor was amazing, the potatoes were crisp and delicious, and what they say is true: Once you go duck fat, you never go back. -Molly
