Windward residents have two new reasons to stop by Bay View Golf Park in 2008.

After closing for 16 days at the end of October, all 18 holes of the golf course were re-opened and ready for tee-offs as of Nov. 17. According to Bay View owner and operator John Rego, course times are the same as before (10 a.m. to 10 p.m.). Right now, however, first tee-offs are at 7 a.m., and twilight is at 4 p.m.because of earlier sunset times and winter rains.

Also open is One Square Restaurant & Bar, a unique dining experience that pairs sports bar favorites with fresh local fare. Example A: a fried tortilla “pizza"topped with furikake-seared ahi, sliced sashimi style, and a poi-infused vinaigrette.

“It’s kinda our signature dish,” laughed owner and executive chef Jaren Niimi.“When customers see it on the menu, they always ask about it. My wait staff just says,‘You gotta try it.’ “

At only 22, Niimi has already built up an enviable culinary resume. While he was still a student at Konawaena High School on the Big Island, he had the opportunity to work under Ryan Vargas at the Four Seasons Resort Hualalai. Niimi also wore the executive chef’s hat at Tsukiji Fish Market and Restaurant at Ala Moana Center before opening his own spot at the Kaneohe golf course this past November.

“I knew since probably elementary school I wanted to be a chef,” said the Mililani resident.“I would go over to my grandma’s house a lot and help her out. And I also like to eat! It’s been a dream of mine to own my own restaurant for a very long time.”

In addition to unexpected food finds on the lunch and dinner menus, One Square also houses a sports bar that is open until 11 p.m. And as of Jan. 6, early birds can catch a breakfast bite as early as 6 a.m.

“Nowadays we’re always on the go and don’t get that opportunity to sit down, talk story and enjoy a good meal with our families,” Niimi explained. “With serving breakfast, there’s more of that opportunity for people to keep those family ties.”

Portuguese sausage, bacon, French toast, make-your-own waffles, fresh fruit and an omelet station ... At $14 per person, this allyou-can-eat breakfast smorgasbord is a true bargain, which is exactly what Niimi had in mind.

“The restaurant is a comfortable place to enjoy a good meal at affordable prices,” he said. “The food is more comfort food - hamburgers, pizzas - and I try to take ideas of the foods I really like to eat and incorporate them all together. And this location suits what I’m trying to do.”

One Square is open from 6 a.m. to 9 p.m. Wednesday through Saturday and Monday; and 7 a.m. to 9 p.m.Sunday.The breakfast buffet is only offered on Sunday, with final seating at 10 a.m. The restaurant is closed on Tuesdays.
