Hawaii Job Corps’Culinary Team won the Western Region Culinary Expo’s"Dinner is Possible: Cooking Light Challenge” last month in San Francisco, sweeping the cooking competition and tying for first place in “knowledge.”

During the four-day event, the students had their original dishes judged by The Food Network‘s Robert Irvine, who hosts Dinner Impossible, and Chef Jeff Henderson, host of The Chef Jeff Project.

“These four students really applied themselves; they found out firsthand that hard work and determination really pay off,” said their culinary instructor Robert Tom.

Dishes by Dahyla Saunders,Kehaulani Idip,Christine Kaniho and Timothy Pangelinan were evaluated for presentation, taste, healthiness and creativity. The winning entries included a kataifi-wrapped shrimp appetizer with coconut pesto sauce, Asian sashimi slaw with soy vinaigrette, citrus kalbi-marinated pork tenderloin kabobs with baby bok choy and sesame-crusted rice cakes. The Waimanalo team topped off its presentation with a dessert sampler of chocolate lava cake, raspberry and passion fruit coulis and a tropical flan.

“We studied as a team in the evenings, after classes and spent most weekends in the kitchen perfecting our dishes,” recalled Pangelinan.

The Job Corps’ culinary students also showcase their talents at numerous island service projects, catering meals for the Pearl Harbor Apprenticeship Graduation, Manawalea Therapeutic Riding Center, Waimanalo Kupuna Housing holiday party, the city’s gingerbread house building event and Honolulu Community Action Program’s volunteer appreciation luncheon.

Their success also was recognized by Waimanalo Neighborhood Board.
