St. Mark Is Banking On Its Huli-Huli

Smoky folks under a battle-worn tent at St. Mark Lutheran School are creating a bonanza for the school and community.

Manny’s Huli-Huli Chicken is nothing to squawk at. The Marquardsen family’s weekly chicken sales are a hit with everyone except, possibly, the chickens.

“One week they give a percentage of their proceeds to the church, and the next week to the school as part of their outreach,” explained St. Mark principal Linda Tatomer.


The cookouts also put dinner on the table for a growing list of Kaneohe customers, help St. Mark students earn their passage on educational trips and pay for classroom needs. The children can sell tickets to earn more.

Students rotate shifts each week and “wages"go into individual accounts for them. “No money is actually given to them,” Tatomer said,“but many have already volunteered enough hours to pay for their whole trip.”

They also learn some job smarts, such as making change, husking corn, and standing for long periods.“It’s better than my job at home,” said student Ryan Tokishi, as he wrapped sweet Kahuku corn cobs in foil.


Manny Marquardsen, a Kahuku grad living in Kaaawa, bought the fundraising arm of Pacific Poultry when it closed, and his dad John and kin have jumped into the weekend act. For a year now, the grills have been turning and the sauces squirting. Each Saturday about 300 chickens do the hulihuli for the sake of the kids.

It’s about quality control, not “burn-and-churn,” said John Marquardsen, wiping a charcoal smudge off his face.“On Saturday, I could run for mayor and win.” Ask any customers, if they can ever stop eating.
