Who Has Influenced You Most In Your Cooking Career? Paul Bocuse. He is a classic master who can express food with modern style.

Favorite Dish At Your Own Restaurant? Stuffed opakapaka wrapped with nori and stuffed with lupcheong sausage hash and enhanced with shoyu ginger butter sauce.

Favorite Dish At Another Hawaii Restaurant? Grilled kalbi short ribs at Alan Wong’s.


What Item Is Always In Your Fridge? Whipping cream and butter.

Your Favorite Late Night Snack? Taro chips with tomato salsa fresca, guacamole and sour cream.

Which Person (Living or Dead) Would You Most Like To Cook For? My mother and my grandmother. They were both wonderful cooks.

What Ingredients Could You Not Live Without? Demi glace, butter, whipping cream, brandy, Marsala, Madeira, port wine and cognac.

How Would You Describe Your Cooking To Someone Who Has Never Been To The Restaurant? I love the old school of cooking, combined with today’s focus on fressh ingredients and artistic presentation. My cooking is a modern classic style of cuisine.
