Title:

General manager, Lulu’s Surf Club, Waikiki Beach

Where were you born and raised?

Syracuse, N.Y.

How did you get interested in the F&B world?

I was working in another field in Atlanta, and I came to Hawaii and realized I really wanted to live and work here. So when I went home, I got into bartending and waiting because I knew that I was somehow going to come back to Hawaii and that this would be a good start.

So your plan worked, obviously.

Yes! I arrived here three months before Lulu’s opened and have been here ever since.

How do you describe the restaurant to people who’ve never been?

It’s casual island-American cuisine. It’s a great place for everyone - the food is good, the service is good and friendly, and we’re good enough on all levels to fit any needs. We’re a local company right here in Waikiki, and I think we offer a taste of Hawaii here whether you’re a tourist or a local looking for a great place to eat and drink. We’re not run by a corporate machine on the Mainland. We’re really a part of the community.

Favorite dishes on the menu?

Black-and-blue ahi Benedict for breakfast and crab-stuffed mahimahi, or one of our sizzling steaks for dinner - the food is all great.

Where do you like to go when you’re not working?

I like Uncle Bo’s on Kapahulu Avenue - it has a great menu and it’s open late, which I like. I go to Paesano for Italian.

What’s always in your fridge?

Usually steaks, poke, yogurt - lots of breakfast stuff because I eat out mostly.

Anything you miss about New York?

Apart from my family? Nothing really. I love it here.

Who would you most like to see come to Lulu’s for dinner?

Robert De Niro.
