Where were you born and raised? I was born and raised in Hana, Maui.
What started your inter- est in the F&B world?
I started more than 30 years ago and immediately enjoyed the interaction with guests, staff and chefs. Over the years I’ve had the opportunity to work with some of our most talented chefs on very special events sponsored by hotels.
What was your first job?
A cannery worker at the Maui Land and Pineapple Company.
You’ve been involved with some of the most memo- rable food and wine events. Do you have favorites?
Well, they’re all amazing events, but some of them, like Cuisines of the Sun at Mauna Lani and the Winter Wine Escape at the Mauna Kea Beach Resort, were very special.
Is there anyone who has made a special impression on you throughout your years in the industry?
I worked with Alan Wong at the Mauna Lani Bay Hotel in the early ‘90s when he was the chef at the CanoeHouse and I was national sales manager for the resort, and he impressed me then with his creativity and willingness to go outside the box. He’s the same way today, and it still impresses me.
There are lots of places to choose to eat among all the Outrigger restaurants. Do you have a favorite?
Ocean House at Outrigger Reef. It offers ocean views, friendly staff and good food.
What’s your favorite dish there?
Fresh fish - usually moi.
Where do you eat out when you’re not at Outrigger?
Side Street, of course! And Aku Bone right next door. They both have great food.
Favorite dishes?
The broiled ika and edamame at Side Street.
What’s always in your fridge?
Fresh seasonal fruits and edamame.
Outrigger is going through some pretty exciting changes. What can we look forward to in 2008?
There’s the 2008 Grammy Awards in Los Angeles. We’re planning for that now, and we’ve just found our signature cocktail (inspired by the Grammy nominees) to represent the islands at the awards. Then there’s the launch of Outrigger Reef Hotel after renovations.
How do you plan to spend New Year’s Eve and what will you be drinking?
At Aloha Tower Marketplace, celebrating with friends. Roederer Cristal champagne is my favorite celebratory drink, but to tell you the truth, I’m a beer drinker at heart.
