Gala For Culinary Scholarships

Kapiolani Community College culinary students will offer cooking demonstrations and tastings in seatings at 9 a.m., 11 a.m. and 1 p.m. May 15 at the Sub-Zero and Wolf Showroom (938 Piikoi St. at King).
The students, all 2009 final-ists in the Tom & Warren Matsuda Scholarship Culinary Competition, are Hawaii Kai’s Meng-Ling Erik Kuo, Kaimuki’s Tate Nakano-Edwards and Rena Suzuki. Their menu features three appetizers by Kuo - Peppercorn Crusted Seared Ahi with Aloe Vera Ponzu Sauce garnished with Shiso Chiffonade Sea Asparagus and Crushed Pink Peppercorns; Fried Lime Cilantro Kahuku Corn Marinated with Aloe Vera, Avocado, and Tomato Concasse Mousse, garnished with Maui Sweet Onion Brunoise; Hawaii Island Lehua Honey Ume Liqueur Lemonade with Local Fresh Aloe Vera, Cucumber and Mint. Garnished with Orange Supreme and Green Tea Maui Raw Sugar on the rim.
Edwards will create Lamb Loin Salad with Big Island Hearts of Palm, Waialua Asparagus, Mizuna Greens, Crusted Big Island Goat Cheese Round and Lilikoi Mint Vinaigrette.
The entree by Suzuki is Beef Tongue and Hamakua Mushroom Stew with Stuffed Cabbage Roll, Two Colored Potato Gratin and Orange Fennel with French Beans,garnished with Crispy Molokai Sweet Potatoes. A special dessert will complete the tasting.
Chef Roy Yamaguchi, who established the scholarship fund, will attend the demonstration.
Tickets cost $30 per seating, and reservations are required. All proceeds will go to the scholarship program, which supports culinary education through Culinary Institute of the Pacific and its programs statewide.
