Culinary Students Whip Up Tasty Final

Leeward Community College’s Culinary Arts program is prepping for another Chef Showcase Dinner Friday night at on-campus restaurant The Pearl, this time featuring the talents of chef D.K. Kodama, owner of Sansei restaurants.
The meal begins with Black Tiger Shrimp and California Roll Saute with barbecue Hollandaise and is paired with an Oroya. From there diners will enjoy the Seared Ahi Sashimi Nicoise Salad with Garlic Anchovy Aioli and a glass of La Poussin Rose. The third offering features SichimiCrusted Beef Tenderloin on Fresh Udon Noodles with Roasted Ali’i Mushrooms and a Roasted Garlic Demi Jus and a glass of Hybrid Petite Sirah.
Each course comes with a wine pairing that has been selected by Master Sommelier Chuck Furuya.
The dessert course of Sansei Tempura Fried Ice Cream with Chocolate and Caramel Sauce and Seasonal fruits is paired with Waialua Coffee.
Tickets for the Nov. 12 dinner cost $85 with wine, $70 without. Seatings begin at 6 p.m. For reservations, call 455-0298.
Linda Yamada, chef instructor at LCC, said the biannual event is one of the final challenges for the culinary arts students, who must act as chef, general manager and accountant throughout dinner service.
“They actually work with Chef D.K. to produce his dishes,” she said. “They are doing as much of the planning as possible, so they get the experience of putting on a special event.
“The expectations of the industry bring a little stress to the students’ lives, which is good,” Yamada added, “and it forces them to rise to a higher level, because now they are getting ready to go out there.”
