A Fresh Moi Feast
This week we prepare sashimi and poke made with moi aquacultured offshore in Hawaiian waters with special guest Randy Cates of Cates International Inc.
Try the following simple poke recipe, grab your chopsticks and discover the fresh flavor of locally farmed moi.
MOI POKE
• moi (diced)
• Hawaiian salt
• kukui nut, minced, or inamona
• limu kohu, chopped
• shoyu
• sesame seed oil
• sweet onions, chopped
• green onions, chopped
• Hawaiian red chili pepper, minced
