Cooking Lunch On Lovely Lanai

This week we take the show on the road to cook lunch for Lanai High and Elementary School - which has one of the best attendance records of all the Neighbor Islands - with guests principal Pierce Myers and cafeteria manager Gordon Chew. This show originally aired in June 2002.

SWEET AND SOUR CHICKEN

* 8 boneless chicken thighs
* 1/8 cup Aloha shoyu
* 1 teaspoon minced garlic
* 1 teaspoon minced ginger
Marinate chicken in shoyu, garlic and ginger for at least one hour. Bake at 350 degrees for 30-35 minutes. Pour sweet and sour sauce over chicken.


For Sweet and Sour Sauce:

* 1 cup sugar
* 1/2 cup ketchup
* 1/2 cup vinegar
* 1/2 cup water
* 1/4 cup orange marmalade
* 2 tablespoons pineapple juice
* 2 teaspoons Aloha shoyu
* 11/2 teaspoons minced ginger
* 1 teaspoon minced garlic
* 2 tablespoon cornstarch blended with 11/2 tablespoons water

Blend cornstarch with water to form a paste; set aside.

In a saucepan, combine remaining ingredients. Bring to a boil and add cornstarch paste. Reduce heat and simmer, stirring frequently, until thickened.

Makes 11/2 cups.

CREAMY ORIENTAL DRESSING

* 3 cups mayonnaise
* 1/2 cup shoyu
* 3/4 cup granulated sugar
* 1/4 teaspoon white pepper
* 11/2 tablespoons black sesame seeds
* 1 tablespoon sesame oil

Whisk all of the ingredients together until well-blended. If the consistency is too thick, whisk in a few drops of water at a time until you get the consistency you desire.

Makes 4 cups.


CHOCOLATE CHIP COOKIES

* 11/2 cups butter, softened
* 11/4 cups granulated sugar
* 13/4 cups light brown sugar
* 3 eggs
* 4 1/2 cups all-purpose flour
* 2 teaspoon baking soda
* 1/2 teaspoon salt
* 2 teaspoons pure vanilla
* 1 pound (16-ounce bag) semi- sweet chocolate chips

Cream butter, granulated sugar and brown sugar using a paddle attachment on medium speed until mixture is smooth, approximately 2 minutes. Add eggs gradually and scrape sides of the bowl. Mix another 2 minutes on same speed.

Add flour and remaining ingredients except the chocolate chips. Mix on low speed for one minute. Stop mixer and scrape bowl. Continue mixing on low speed for another minute. Add chocolate chips and mix gently until chips are incorporated. Do not overmix. Bake at 375 degrees for 10-12 minutes. Remove cookies from the oven when slightly underbaked. Cooking will continue baking on hot sheet pan.
