Getting Saucy With Fresh Island Fish

This week we fire up the grill for the following flavorful Island fish recipes.

MAHI MAHI WITH SPINACH CREAM SAUCE

• 5-6 ounce mahi mahi or snapper filet (OK to substitute other fish)

salt

• 1 cup olive oil or salad oil

• 1 sprig fresh rosemary

• 4 sprig fresh thyme

• 4 garlic cloves (minced)

• 1 bay leaf

• 1 teaspoon black peppercorns

Marinate fish in herb⁄oil for approximately a half hour to one hour. Squeeze a wedge of lemon over the filets as they cook on the grill.


For Spinach Cream Sauce:

• 1⁄4 pound unsalted butter

• 1 cup diced round onions

• 1 tablespoon minced garlic

• 1⁄4 cup all-purpose flour

• 1 cup chicken stock

• 1 quart heavy cream

• 1 cup chopped fresh or frozen spinach

• 1 tablespoon chopped fresh tarragon (optional)

salt and pepper, to taste

lemon juice, to taste

In a saucepan, sauté the onion and garlic in butter; add flour to create a roux. Slowly add heavy cream while whisking to prevent lumps. Add chicken stock, continue to whisk until nice and smooth. Squeeze lemon juice. Add spinach and tarragon. Season to taste with salt and pepper. If roux is too thick, add more chicken stock.


AHI WITH GINGER SAUCE

• 5-6 ounces ahi

salt and pepper, to taste

olive oil to coat ahi

minced garlic

Salt and pepper ahi filets, coat with olive oil and minced garlic.

Grill ahi medium rare.


Ginger Sauce:

• 1 cup ginger, finely chopped or minced in food processor

• 4-5 stalks green onions, minced

• 1-2 pieces of Chinese parsley (cilantro), minced

• 3⁄4 cup olive or vegetable oil

• 2 teaspoons salt


For Grilled Vegetables:

tomatoes

onions

red or green peppers

zucchini

Season the vegetables with salt and pepper and grill. Cut vegetables into large pieces. In a large bowl, mix the cut grilled vegetables with a drizzle of olive oil, salt and pepper.

Place the grilled ahi filets next to the chopped grilled vegetables on a plate. Drizzle the ginger sauce over the grilled ahi filets and serve.
