Ono Opakapaka
The Makaha Sons sing for their supper on this week’s show while we prepare the luau.
SAUTEED OPAKAPAKA WITH SPINACH COCONUT LUAU SAUCE
* 4 opakapaka fillets, 6 ounces each
* 1 teaspoon minced fresh ginger
* 1 teaspoon minced garlic
* 1/2 teaspoon salt
* 1/2 teaspoon white pepper
* 1 tablespoon olive oil
* 1/4 cup flour
* 2 tablespoons butter
* 1 tablespoon cooking oil
Season opakapaka fillets with ginger, garlic, salt, pepper and olive oil. Coat with flour. In a large skillet, heat butter and cooking oil. Saute fish fillets until just cooked; do not over-cook.
Transfer fish to a warm serving plate and serve with spinach coconut luau sauce.
For Spinach Coconut Luau Sauce:
* 3 tablespoons minced Maui onions
* 1/4 tablespoon minced fresh ginger
* 2 tablespoons butter
* 1 cup heavy cream
* 1/4 cup coconut milk
* salt, pepper and sugar, to taste
* 1/2 cup cooked fresh luau leaves (OK to substitute chopped fresh spinach)
In a small saucepan, sauté onion and ginger in butter for 3 minutes, or until onion is translucent. Add heavy cream, bring to a boil and reduce by half. Stir in cooked luau leaves and coconut milk, and cook for 2 minutes. Season to taste with salt, pepper and sugar.
POKE PATTIES
For Patties:
* 1 cup diced very fresh ahi, cut into about 1/4 - to 3/8 -inch cubes
* 1/4 cup minced onion
* 2 tablespoons chopped fresh ogo
* 1/4 cup minced green onions
* 2 tablespoons shoyu
* 1 teaspoon sesame seed oil
* 1 egg
* pinch salt and pepper
* panko (bread crumbs)
For Sauce:
* 2 tablespoons butter
* 1/4 cup sliced mushrooms
* 1 teaspoon shoyu
* 1 teaspoon oyster sauce
* 1 teaspoon chopped cilantro
Combine patty ingredients and sprinkle in panko or bread crumbs to soak up extra liquid.
Form patties and coat with panko. In a frying pan, heat 2 tablespoons of canola oil and cook patties over medium-high heat. Gently press patties in pan and brown on both sides, keeping the inside of the patties medium-rare.
To make sauce, sauté mushrooms in butter for 2 minutes. Add remaining sauce ingredients and cook for 1 minute. Pour sauce over patties and serve as an appetizer.
